Why did nobody tell me this before? On a HTC Desire S (and apparently at least some other HTC models) you can grab a screen shot by holding down Power and pressing Home.
Not sure it’s this easy on other Android devices, alas.

On Ice Cream Sandwich (Android 4.0.X) you can take a screenshot by holding power+volume down.
Same with the Samsung Galaxy S II, but not the original HTC Desire.
That said, there’s always the debugging tools that do the job on any android phone.
